  • 2 tbsp melted butter (for streusel topping)

Instructions

  1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a bowl, whisk together flour, baking powder, cinnamon, and sugar.
  3. In another bowl, mix melted butter, eggs, milk, and vanilla until smooth.
  4. Gradually fold dry ingredients into wet ingredients until just combined.
  5. For the streusel topping, mix brown sugar, cinnamon, and melted butter in a small bowl until crumbly.
  6. Fill muffin cups two-thirds full with batter and sprinkle streusel topping generously.
  7. Bake for 18-20 minutes or until golden brown and a toothpick comes out clean.
  8. Let cool slightly before serving.
