  • 4 large bell peppers (any color)
  • 1 lb ground beef or turkey
  • 1 cup cooked rice (white or brown)
  • 1 can (15 oz) black beans, rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Fresh cilantro, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Slice the tops off the bell peppers and remove seeds. Place them upright in a baking dish.
  2. In a skillet over medium heat, brown the ground beef or turkey until fully cooked. Add diced onions and garlic until fragrant.
  3. Stir in cooked rice, black beans, diced tomatoes, cumin, and chili powder; mix well until warmed through.
  4. Spoon the filling generously into each pepper and top with shredded cheese.
  5. Cover with foil and bake for 30 minutes. Remove foil and bake an additional 10 minutes until cheese is golden brown.
  6. Garnish with fresh cilantro before serving.
