  • 1 cup pre-rinsed quinoa
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 avocado, diced
  • 3 tablespoons olive oil
  • Juice of 1 lemon (about 2 tablespoons)
  • Fresh herbs (parsley or cilantro), chopped to taste
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water. In a medium pot, combine quinoa with 2 cups of water. Bring to a boil over medium heat, then reduce to low and cover until fluffy (about 15 minutes).
  2. While the quinoa cooks, chop cherry tomatoes and cucumber into bite-sized pieces. Dice avocado just before serving.
  3. In a small bowl, whisk together olive oil and lemon juice; season with salt and pepper.
  4. In a large bowl, combine cooked quinoa, chopped tomatoes, cucumber, chickpeas, and diced avocado. Drizzle with dressing.
  5. Add fresh herbs and gently toss to combine.
