  • 1 lb lean ground beef
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup sweet corn (canned or frozen)
  • 3 cups tortilla chips
  • 2 cups shredded sharp cheddar cheese
  • 1 cup sour cream (for topping)
  • 2 green onions, chopped (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, brown the ground beef over medium heat until fully cooked; drain excess fat.
  3. Stir in taco seasoning and a splash of water; simmer for about 5 minutes until thickened.
  4. In a baking dish, layer half of the tortilla chips, followed by half of the beef mixture, black beans, corn, and cheese. Repeat layers.
  5. Cover with foil and bake for 20 minutes; remove foil and bake for an additional 10 minutes until cheese is bubbly.
  6. Let cool slightly before serving; top with sour cream and green onions.
