  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 medium onion, chopped
  • 1 cup bell peppers, chopped (mixed colors)
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 3 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • Optional: Sour cream or Greek yogurt for serving

Instructions

  1. Prepare ingredients by dicing onion and bell peppers.
  2. Sauté onion and bell peppers in a skillet over medium heat until softened (about 5 minutes).
  3. Brown the ground beef in the skillet; drain excess fat.
  4. Transfer meat and sautéed veggies to the crockpot. Add diced tomatoes, black beans, kidney beans, garlic, chili powder, cumin, and beef broth. Stir well.
  5. Cook on low for 6-8 hours or high for 3-4 hours until flavors meld.
  6. Serve hot with optional toppings like sour cream or Greek yogurt.
