  • 4 cloves fresh garlic, minced
  • 2 cups low-sodium beef broth
  • 1 cup dry red wine
  • ¼ cup low-sodium soy sauce
  • 2 tbsp brown sugar
  • 1 tsp dried thyme (or 2 sprigs fresh thyme)
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tbsp olive oil for searing

Instructions

  1. Slice onions and mince garlic.
  2. Heat olive oil over medium-high heat in a large pot. Sear ribs for about 5-7 minutes per side until browned. Remove from pot.
  3. Add onions to the pot; cook until translucent (about 4 minutes). Stir in minced garlic for an additional minute.
  4. Pour in red wine, scraping any browned bits off the bottom of the pot. Add beef broth, soy sauce, brown sugar, thyme, bay leaf, salt, and pepper.
  5. Return ribs to the pot, ensuring they are submerged in the sauce. Bring to a gentle simmer and cover with a lid.
  6. Reduce heat to low and cook for 2-3 hours until fork-tender.
