  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 8 oz fettuccine pasta
  • 2 tbsp Cajun seasoning
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. Prep ingredients: chop bell peppers, mince garlic, and slice chicken into bite-sized pieces.
  2. Cook chicken: In a large skillet over medium heat, heat olive oil. Add seasoned chicken pieces and cook until golden brown (about 6-7 minutes). Remove and set aside.
  3. Sauté vegetables: In the same skillet, add more olive oil if needed and sauté onions and peppers until softened (around 5 minutes).
  4. Add garlic and cream: Stir in minced garlic for about 30 seconds before pouring in heavy cream. Mix well.
  5. Combine: Return cooked chicken to the skillet along with drained pasta. Toss together until coated in sauce.
  6. Finish: Stir in Parmesan cheese until melted; adjust seasoning as needed.
