  • 2 bell peppers (mixed colors)
  • 1 medium onion (yellow or red)
  • 2 tbsp olive oil
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • Salt & pepper to taste
  • 8 flour or corn tortillas
  • Your choice of toppings (sour cream, guacamole, cheese, cilantro)

Instructions

  2. In a bowl, combine chicken strips with chili powder, cumin, garlic powder, salt, and pepper. Let marinate for at least 15 minutes.
