  • 4 medium poblano peppers
  • 1 lb ground beef or turkey
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup shredded Monterey Jack or cheddar cheese
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp chili powder
  • ¼ cup fresh cilantro, chopped (optional)
  • 1 cup tomato sauce
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C). Wash and halve poblano peppers, removing seeds.
  2. In a skillet over medium heat, add olive oil, onion, and garlic. Sauté until onions are translucent.
  3. Add ground meat and spices; cook until browned (8-10 minutes).
  4. Stir in half the cheese and tomato sauce until well combined.
  5. Fill pepper halves with the mixture and sprinkle remaining cheese on top.
