  • 4 medium green bell peppers
  • 1 lb lean ground beef
  • 1 cup cooked rice
  • 1 can (14.5 oz) diced tomatoes
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 cup shredded cheese (optional)
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the green bell peppers and remove seeds; place upright in a baking dish.
  3. In a skillet over medium heat, add olive oil and sauté diced onions and minced garlic until translucent (about 3-4 minutes).
  4. Add ground beef, salt, pepper, and spices; cook until browned. Drain excess fat if necessary.
  5. In a large bowl, combine cooked rice, meat mixture, diced tomatoes (with juices), and half of the shredded cheese; mix well.
  6. Stuff each pepper with the filling until packed full. Top with remaining cheese if desired.
  7. Cover with foil and bake for 30 minutes; remove foil and bake an additional 10-15 minutes until cheese is bubbly.
