Ingredients

Scale
  • 1 ribeye steak (12 oz)
  • 2 Yukon Gold potatoes (about 1 lb)
  • 4 tbsp unsalted butter
  • 1/2 cup heavy cream
  • 1 tsp garlic powder
  • 1 tsp fresh rosemary or thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by washing and peeling the potatoes, then cut them into even chunks.
  2. In a pot, place potato chunks in cold salted water; bring to a boil and cook until fork-tender (15-20 minutes). Drain well.
  3. In a large bowl, combine drained potatoes with butter and heavy cream. Mash until smooth; season with garlic powder, salt, and pepper.
  4. Season the ribeye steak generously with salt and pepper; let sit at room temperature for 15 minutes.
  5. Heat a cast-iron skillet over high heat. Add oil and sear the steak for 4-5 minutes per side for medium-rare doneness.
  6. In the last minute of cooking, add fresh herbs and a pat of butter to baste the steak. Let it rest for five minutes before slicing.
  7. Serve with creamy mashed potatoes on the side.
