Ingredients

Scale
  • 34 boneless, skinless chicken breasts (1 lb)
  • 4 large flour tortillas
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 cup bell peppers (mixed colors), diced
  • 1 cup onions, diced
  • 1/2 cup medium salsa
  • 2 tsp paprika
  • 2 tsp cumin
  • 2 tsp chili powder
  • Salt and pepper to taste
  • 1/4 cup sour cream or Greek yogurt (optional)
  • 2 tbsp olive oil

Instructions

  1. Prep your ingredients by dicing the vegetables.
  2. Heat olive oil in a skillet over medium heat. Cook chicken breasts for about 6-7 minutes per side until golden brown and cooked through.
  3. Season chicken with paprika, cumin, chili powder, salt, and pepper while cooking.
  4. Remove the chicken from heat, shred it using two forks, and mix it back into the skillet with sautéed veggies until heated through.
  5. Assemble each burrito by laying a tortilla flat and placing the shredded chicken mixture in the center. Top with cheese and salsa before folding tightly.
  6. Return assembled burritos to the skillet seam-side down over medium heat for about 3-4 minutes until crispy; flip carefully.
