  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 2 medium yellow onions, diced
  • 4 garlic cloves, minced
  • 1 cup bell peppers (red or green), diced
  • 1 cup tomato sauce (crushed)
  • 3 medium Yukon Gold potatoes, peeled and chopped
  • 2 large carrots, chopped into thick rounds
  • 2 tsp ground cumin
  • 1 tsp dried oregano
  • 2 bay leaves
  • 3 cups beef broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare all ingredients by chopping the beef, dicing onions and bell peppers, mincing garlic, and peeling potatoes and carrots.
  2. In a large pot over medium-high heat, add olive oil. Sear the beef cubes until browned on all sides (about 5-7 minutes).
  3. Reduce heat slightly; add onions, garlic, and bell peppers. Cook until softened (approximately 4 minutes).
  4. Stir in tomato sauce, cumin, oregano, salt, pepper, and bay leaves; mix well.
  5. Add potatoes and carrots, followed by beef broth until fully submerged. Bring to a gentle boil then reduce heat to low.
  6. Cover and let simmer for 1-2 hours, stirring occasionally until beef is tender.
  7. Serve hot over rice or with warm tortillas.
