  • 34 lbs chuck roast
  • 1 large yellow onion, chopped
  • 4 cloves garlic, minced
  • 2 tsp ground cumin
  • 23 chipotle peppers in adobo sauce (adjust to taste)
  • Juice of 2 limes
  • 1 cup beef broth
  • Salt and pepper to taste

Instructions

  1. Trim excess fat from the chuck roast and cut into large chunks. Season generously with salt and pepper.
  2. In a skillet over medium heat, add oil and sauté chopped onions until translucent (about 5 minutes).
  3. Add minced garlic, cumin, and chipotle peppers; stir for about one minute until fragrant.
