  • 4 lbs fresh Roma tomatoes
  • 2 tbsp bottled lemon juice
  • 1 tsp non-iodized salt
  • Water (for blanching and canning)
  • Canning jars (quart-sized)

Instructions

  1. Gather all supplies: fresh tomatoes, sterilized jars, lids, and a canning pot.
  2. Wash tomatoes thoroughly. Blanch in boiling water for 30 seconds until skins loosen; transfer to an ice bath.
  3. Peel skins off cooled tomatoes and chop into quarters.
  4. For each quart jar, add 2 tbsp lemon juice and 1 tsp salt before packing tightly with chopped tomatoes.
  5. Fill jars with boiling water, leaving 1-inch headspace. Wipe rims clean, seal jars with lids.
  6. Process in a boiling water bath for 40 minutes (adjust for altitude). Allow to cool completely before storing.
