Ingredients

Scale
  • 1 ribeye steak (1 inch thick, approximately 12 oz)
  • 1 tsp coarse sea salt
  • 1/2 tsp black pepper
  • 3 cloves fresh garlic (crushed)
  • 2 tbsp unsalted butter
  • 2 sprigs fresh thyme or rosemary

Instructions

  1. Remove the ribeye steak from the fridge and let it sit at room temperature for about 30 minutes. Pat dry with paper towels.
  2. Generously season both sides with salt and pepper.
  3. Preheat a cast-iron skillet over medium-high heat until smoking hot; add a splash of oil.
  4. Sear the steak for 4-5 minutes without moving it to develop a crust.
  5. Flip the steak and add crushed garlic and herbs; baste with melted butter while cooking for another 4-5 minutes or until desired doneness is reached (130°F for medium-rare).
  6. Transfer to a cutting board and rest for 5-10 minutes before slicing.
