  • 1/2 cup chopped pistachios (toasted or raw)
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
  3. Beat in the eggs one at a time along with the vanilla extract until fully combined.
  4. In another bowl, whisk together flour, baking soda, salt, and pistachio pudding mix.
  5. Gradually add the dry mixture to the wet ingredients until just combined; do not overmix.
  6. Gently fold in chopped pistachios until evenly distributed.
  7. Using a cookie scoop or spoon, drop rounded tablespoons of dough onto prepared baking sheets about 2 inches apart.
