Smashed potatoes are the ultimate comfort food, combining crispy edges with fluffy, buttery interiors that melt in your mouth.

Ingredients

  • 2 lbs baby potatoes
  • 4 tbsp extra virgin olive oil
  • 1 tsp coarse sea salt
  • 1/2 tsp black pepper
  • 3 cloves garlic, minced
  • 2 tbsp fresh rosemary or thyme (chopped)
  • 1/2 cup grated Parmesan cheese (optional)

Instructions

  1. Boil the baby potatoes in a large pot of salted water until fork-tender (15-20 minutes).
  2. Drain and let cool slightly, then transfer to a parchment-lined baking sheet.
  3. Gently smash each potato with a fork or potato masher until flattened but intact.
  4. Drizzle olive oil over each potato and sprinkle with salt, pepper, minced garlic, and fresh herbs.
  5. Preheat the oven to 425°F (220°C) and bake for 20-25 minutes until golden brown and crispy.
  6. If desired, add Parmesan cheese during the last five minutes of baking for an added cheesy crust.
