  • 1 cup Greek yogurt
  • 1 medium English cucumber, grated
  • 2 tablespoons fresh dill (or 1 tablespoon dried dill)
  • 3 garlic cloves, minced
  • 2 tablespoons lemon juice
  • ½ teaspoon salt (to taste)
  • ¼ teaspoon pepper (to taste)
  • 4 cups mixed greens (spinach and arugula)
  • 2 tablespoons olive oil

Instructions

  1. Preheat your grill or skillet over medium-high heat. Season chicken breasts with salt and pepper. Grill for 6-7 minutes per side until the internal temperature reaches 165°F (75°C).
  2. While the chicken cooks, prepare the tzatziki sauce by mixing Greek yogurt, grated cucumber, garlic, dill, lemon juice, salt, and pepper in a bowl. Set aside.
  3. Once cooked, let the chicken rest for about 5 minutes before slicing it into bite-sized pieces.
  4. In a large bowl, toss mixed greens with olive oil. Add the sliced chicken and drizzle with tzatziki sauce. Gently combine.
