  • 1/2 cup unsalted butter (cold, cubed)
  • 1/4 cup ice water
  • 3 large eggs
  • 2 cups ripe heirloom tomatoes (sliced)
  • 1 cup goat cheese or feta (crumbled)
  • 2 tbsp fresh basil or thyme (chopped)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine flour and cold butter until crumbly. Gradually add ice water to form dough; chill for 30 minutes.
  3. Roll out the dough on a floured surface into a circle and press it into a tart pan.
  4. Blind bake the crust for 15 minutes with parchment and weights; then remove weights.
  5. Whisk together eggs, cheese, chopped herbs, salt, and pepper in a bowl.
  6. Layer sliced tomatoes on the baked crust and pour egg mixture over them. Bake for an additional 25-30 minutes until set.
  7. Allow cooling for 10 minutes before slicing.
