  • 1 cup strong brewed coffee or espresso, cooled
  • 24 ladyfingers
  • 16 oz mascarpone cheese
  • 3/4 cup granulated sugar
  • 4 large eggs, separated
  • 1 tsp vanilla extract
  • 2 tbsp unsweetened cocoa powder

Instructions

  1. Brew coffee and let it cool slightly.
  2. In a bowl, beat mascarpone cheese with sugar and vanilla until smooth.
  3. Separate egg whites and yolks; whip egg whites until stiff peaks form. Gently fold into mascarpone mixture.
  4. Quickly dip ladyfingers in coffee and layer them in a serving dish with half of the cream mixture.
  5. Repeat layering with remaining ladyfingers and cream, smoothing the top. Dust with cocoa powder.
  6. Refrigerate for a minimum of 4 hours or overnight before serving.
