  • 12 large pasta shells
  • 1 lb lean ground beef
  • 2 tbsp taco seasoning
  • 1 cup salsa (divided)
  • 2 cups shredded cheddar and Monterey Jack cheese
  • ½ cup sour cream (for topping)
  • Fresh cilantro (for garnish)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Boil salted water and cook pasta shells until al dente; drain carefully.
  3. In a skillet, brown ground beef over medium heat; drain fat and stir in taco seasoning and half of the salsa. Simmer for 5 minutes.
  4. Stuff each shell with the beef mixture and arrange in a greased baking dish.
  5. Pour remaining salsa over shells and top with shredded cheese.
  6. Cover with foil and bake for 20 minutes; remove foil and bake for an additional 10-15 minutes until bubbly and golden.
