  • 1/2 cup packed brown sugar
  • 1 tsp ground cinnamon
  • 1/2 cup unsalted butter
  • 2 cups mini marshmallows
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with nonstick spray.
  2. Peel and chop the sweet potatoes into chunks. Boil in salted water until fork-tender (15-20 minutes).
  3. Drain and mash the sweet potatoes in the pot. Mix in butter and brown sugar until smooth.
  4. Add cinnamon and a pinch of salt; adjust sweetness as desired.
  5. Spread the mixture evenly in the prepared baking dish. Top with mini marshmallows (and nuts if using).
