  • 2 cups fresh spinach (250g)
  • 2 cups all-purpose flour (240g)
  • 3 large eggs
  • 2 tablespoons extra virgin olive oil (30ml)
  • 1 teaspoon salt
  • ½ cup freshly grated Parmesan cheese (50g)

Instructions

  1. Blanch the spinach in boiling water for 1-2 minutes until bright green, then transfer it to ice water to cool. Drain and set aside.
  2. In a mixing bowl, combine flour and salt. Make a well in the center, add eggs, drained spinach, and olive oil. Mix until combined.
  3. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  4. Divide dough into manageable pieces and roll out to about 1/8 inch thick using a rolling pin or pasta machine.
  5. Cut into desired shapes (fettuccine or tagliatelle) and dust with flour to prevent sticking.
  6. Cook in salted boiling water for 2-4 minutes until they float. Serve with your favorite sauce or simply with olive oil and Parmesan.
