  • 1 medium spaghetti squash (about 34 pounds)
  • 2 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 cup marinara sauce (or your favorite sauce)
  • ½ cup freshly grated Parmesan cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Drizzle olive oil over the insides of each half and sprinkle with garlic powder, salt, and pepper. Rub in the seasoning.
  4. Place cut-side down on a lined baking sheet and roast for about 40 minutes until tender.
  5. Allow to cool slightly, then use a fork to scrape out the strands.
  6. Toss with your favorite sauce and top with Parmesan cheese. Return to the oven for an additional 10 minutes until bubbly.
