  • 4 cups all-purpose flour (500g)
  • 1 ½ cups room temperature water (375g)
  • 2 tsp salt (10g)

  1. Prepare your starter by feeding it 4-6 hours before baking until bubbly.
  2. In a large bowl, mix flour and water; add fed starter and stir until no dry flour remains.
  3. Sprinkle salt over the dough and mix thoroughly until fully incorporated.
  4. Knead the dough on a floured surface for 5-7 minutes until smooth or use stretch-and-fold techniques.
  5. Place in a covered bowl to rise at room temperature for 4-6 hours, performing stretch-and-folds every hour.
  6. Once risen, shape the dough into your desired loaf form and let it proof for another 1-2 hours.
  7. Preheat the oven to 450°F (232°C) with a Dutch oven inside; transfer the loaf into the pot and bake for 30 minutes covered, then uncover and bake an additional 15-20 minutes until golden brown.
  8. Cool completely before slicing.
