  • 1 cup dry rub (paprika, garlic powder, brown sugar)
  • 2 cups wood chips (hickory or applewood), soaked
  • Salt and pepper to taste

Instructions

  1. Rinse the turkey under cold water and pat dry with paper towels. Remove giblets if desired.
  2. Drizzle olive oil over the turkey and rub it evenly over the skin. Generously coat with dry rub.
  3. Preheat your smoker to 225°F (107°C) and add soaked wood chips.
  4. Place the turkey breast side up on the smoker rack. Smoke for about 30 minutes per pound, or until the internal temperature reaches 165°F (74°C).
  5. Baste every hour with melted butter for added moisture if desired.
  6. Once cooked, let the turkey rest for 20-30 minutes before carving.
