  • 8 oz penne or fusilli pasta
  • 1 cup heavy cream
  • 4 cloves garlic (minced)
  • 1 cup bell peppers (diced)
  • 1 medium yellow onion (diced)
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil

Instructions

  1. Slice the smoked sausage into bite-sized pieces. Dice the onion and bell peppers; mince the garlic.
  2. In a large skillet over medium heat, add olive oil and sauté the sausage until browned (5-7 minutes).
  3. Stir in garlic, onion, and bell peppers; cook until softened (about 3 minutes). Meanwhile, boil pasta according to package instructions until al dente.
  4. Pour in heavy cream and Italian seasoning; simmer gently while stirring until slightly thickened.
  5. Add spinach and Parmesan cheese until melted into the sauce.
  6. Drain pasta and toss it in the skillet with the creamy mixture until well coated.
  7. Serve immediately with extra Parmesan on top.
