  • 1 cup celery (chopped)
  • 14 oz canned diced tomatoes
  • 1 cup low-sodium chicken broth
  • 2 tbsp Creole seasoning
  • 2 tbsp olive oil

Instructions

  1. Prepare your ingredients: Peel and devein the shrimp if necessary, then chop the bell peppers, onion, celery, and garlic.
  2. Sauté vegetables: Heat olive oil in a large skillet over medium heat. Add chopped onions, garlic, bell peppers, and celery. Sauté for about 5 minutes until softened.
  3. Add tomatoes & broth: Stir in diced tomatoes and chicken broth. Simmer for 10 minutes to meld flavors.
  4. Season: Sprinkle in Creole seasoning; simmer for another 5 minutes.
  5. Add shrimp: Stir in shrimp and cook until pink and opaque (about 3-5 minutes). Serve warm over rice or with crusty bread.
