  • 4 large flour tortillas
  • 2 cups shredded cheese (1 cup cheddar, 1 cup Monterey Jack)
  • 1 cup diced bell peppers (mixed colors)
  • 1 cup black beans (drained and rinsed)
  • 2 cups cooked chicken (shredded rotisserie preferred)
  • 1 tsp cumin
  • 1 tsp chili powder
  • Sour cream or Greek yogurt (for serving)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine shredded cheese, diced bell peppers, black beans, cooked chicken, cumin, and chili powder.
  3. Place two tortillas on a greased baking sheet. Spread the filling evenly over both and top with the remaining tortillas.
