  • 4 large flour tortillas
  • 2 cups shredded cheese (mozzarella and cheddar blend)
  • 1 cup diced bell peppers
  • 1 cup diced sweet onion
  • 1 cup cooked shredded chicken or black beans
  • 1 tsp cumin
  • 1 tsp chili powder
  • 2 tbsp olive oil
  • Sour cream or salsa (for serving)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat. Sauté diced bell peppers and onions until softened.
  3. In a large bowl, combine cooked chicken or black beans, sautéed veggies, cumin, chili powder, and half of the cheese.
  4. On a baking sheet lined with parchment paper, lay one tortilla flat. Spoon filling onto one half of the tortilla and sprinkle with more cheese before folding over.
  5. Bake for 15-20 minutes until golden brown and crispy. Slice into wedges and serve with sour cream or salsa.
