  • 2 salmon fillets (6 oz each)
  • 1 cup long-grain rice (jasmine or basmati)
  • 2 tsp olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 2 garlic cloves, minced
  • 1 tsp dried dill (or 1 tbsp fresh)
  • Salt and pepper to taste
  • 1 cup mixed vegetables (bell peppers or broccoli) (optional)

Instructions

  1. Rinse rice under cold water until clear; combine with 2 cups of water in a saucepan. Bring to a boil, then cover and reduce heat to low, cooking for about 15 minutes.
  2. Heat olive oil in a skillet over medium-high heat. Season salmon with salt and pepper; place skin-side down in the skillet. Cook for 4-5 minutes until golden brown.
  3. Carefully flip the salmon; add minced garlic, lemon juice, and dill to the pan. Cook for an additional 3-4 minutes until the salmon flakes easily with a fork.
  4. Fluff rice with a fork and serve alongside salmon; drizzle any pan juices over both.
