  • 6 ripe heirloom tomatoes (about 2 lbs)
  • 4 whole garlic cloves
  • 3 tbsp extra virgin olive oil
  • 1 cup fresh basil leaves
  • 1 tsp sea salt
  • ½ tsp black pepper
  • 2 tbsp balsamic vinegar

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Slice the tomatoes in half and place them cut side up on the baking sheet. Drizzle with olive oil and season with salt and pepper.
  3. Roast for 30-40 minutes until soft and caramelized.
  4. Allow to cool slightly, then scrape off any charred bits from the pan.
  5. In a blender, combine roasted tomatoes, garlic, basil, and balsamic vinegar. Blend to desired consistency.
  6. Pour the sauce back into a saucepan over low heat and simmer for 10 minutes before serving.
