Instructions

  3. In another bowl, mix vegetable oil, sugar, eggs, buttermilk, food coloring, and vanilla until smooth.
  4. Gradually fold the dry ingredients into the wet mixture until just combined.
  5. Fill cupcake liners two-thirds full with batter and bake for 18-20 minutes or until a toothpick comes out clean.
  6. Cool in the pan for 5 minutes before transferring to wire racks. Frost once completely cooled.
