Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and ginger.
  3. In another bowl, combine pumpkin puree, sugar, eggs, and vegetable oil until smooth.
  4. Gradually fold the dry ingredients into the wet mixture without overmixing.
  5. Fill cupcake liners two-thirds full and bake for 18-20 minutes until a toothpick comes out clean.
  6. Allow to cool for five minutes before transferring to a wire rack.
  7. Once cooled completely, frost with cream cheese icing.
