  • 1 cup rolled oats
  • 1 scoop (30g) protein powder
  • 2 ripe bananas, mashed
  • 2 large eggs
  • 1/2 cup plain Greek yogurt
  • 1 tsp baking powder
  • 2 tbsp honey or maple syrup
  • 1 tsp ground cinnamon
  • 1/2 cup chocolate chips or nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mash bananas until smooth, then mix in eggs, Greek yogurt, and honey or maple syrup until creamy.
  3. In another bowl, combine oats, protein powder, baking powder, cinnamon, and any optional ingredients.
  4. Gently fold the dry ingredients into the wet mixture until just combined.
  5. Spoon the batter into muffin cups, filling them about two-thirds full.
  6. Bake for 15-20 minutes or until golden brown and a toothpick inserted comes out clean.
  7. Allow to cool for five minutes in the tin before transferring to a wire rack.
