  • 4 bone-in chicken thighs (approximately 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1 medium onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 (14 oz) can diced tomatoes
  • 2 cups chicken broth
  • 2 tsp olive oil
  • 1 tsp cumin
  • 1 tsp oregano
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping the onion and bell peppers and mincing the garlic.
  2. In a large pot, heat olive oil over medium heat. Sear the chicken thighs until golden brown on both sides (5-7 minutes per side).
  3. Remove the chicken and add onions, bell peppers, and garlic to the pot. Sauté until onions are translucent (3-4 minutes).
  4. Return the chicken to the pot, then stir in diced tomatoes and chicken broth. Season with cumin, oregano, salt, and pepper.
