  • 1 box (15.25 oz) yellow or white cake mix
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 cup cold water
  • 1/2 cup chopped unsalted pistachios
  • Whipped topping (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a bundt pan with nonstick cooking spray.
  2. In a large bowl, combine the cake mix and pistachio pudding mix until well blended.
  3. Add eggs, vegetable oil, and cold water to the dry mix. Beat until smooth (about 2 minutes).
  4. Gently fold in chopped pistachios.
  5. Pour the batter into the prepared bundt pan and bake for 30-35 minutes, or until a toothpick inserted comes out clean.
  6. Allow to cool in the pan for 10 minutes before inverting onto a wire rack to cool completely.
