  • 1 cup creamy peanut butter
  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • 2 tsp baking powder
  • 2 large eggs
  • ½ cup milk (almond or regular)
  • ¼ tsp salt
  • Optional: ½ cup chocolate chips or chopped nuts

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mash bananas until smooth.
  3. In another bowl, mix peanut butter and sugar until well combined.
  4. Add eggs one at a time to the peanut butter mixture, mixing well after each addition.
  5. Gradually fold in flour, baking powder, and salt until just combined.
  6. Stir in mashed banana; the mixture may look lumpy.
  7. Fill each muffin cup two-thirds full and bake for 18-20 minutes or until golden brown.
  8. Cool in the pan for 5 minutes before transferring to wire racks.
