  • 1/2 cup unsalted butter (room temperature)
  • 3 large eggs
  • 1 tsp vanilla extract
  • 2 cups fresh peaches (peeled and sliced)
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 tbsp lemon juice

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a bowl, mix flour, sugar, baking powder, and salt.
  3. Beat in butter until crumbly. Add eggs one at a time, then stir in vanilla until smooth.
  4. Gently fold in sliced peaches.
  5. Pour batter into prepared pans and bake for 25-30 minutes or until golden brown.
  6. Cool cakes in pans for 10 minutes before transferring to wire racks.
  7. Whip heavy cream with powdered sugar until soft peaks form.
  8. Layer one cake on a plate, spread whipped cream, top with remaining peaches, place the second cake layer on top, and frost the entire cake with remaining whipped cream.
