  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup granulated sugar (adjust based on peach sweetness)
  • 1/4 tsp salt
  • 3 tbsp ice water
  • Egg wash (1 egg beaten with 1 tbsp milk, optional)

Instructions

  1. In a bowl, mix flour and salt. Add cold butter cubes and blend until crumbly.
  2. Gradually add ice water until dough forms. Shape into a disk, wrap in plastic, and refrigerate for 30 minutes.
  3. Preheat oven to 400°F (200°C). Slice peaches and toss with sugar.
  4. Roll out the dough into a rough circle (12 inches). Place peach slices in the center and fold edges over them.
  5. Brush edges with egg wash if desired. Bake for 30-35 minutes until the crust is golden brown and juices bubble.
