  • ⅓ cup unsalted butter, melted
  • 3 cups fresh peaches, diced (or canned, drained)
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 2 tsp vanilla extract
  • 3 large eggs, room temperature
  • 2 tbsp cornstarch
  • 1 tsp cinnamon

Instructions

  1. Preheat oven to 325°F (160°C). In a bowl, mix graham cracker crumbs and melted butter until well combined. Press into the bottom of a 9-inch springform pan to form the crust.
  2. In another bowl, beat softened cream cheese until smooth. Gradually add sugar, mixing until fluffy. Add vanilla and eggs one at a time.
  3. Gently fold in diced peaches, cornstarch, and cinnamon until evenly distributed.
  4. Pour the filling over the prepared crust and bake for 50–60 minutes or until edges are set but center is slightly jiggly.
  5. Allow to cool at room temperature before refrigerating for at least four hours or overnight.
