  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 57 tablespoons ice-cold water
  • 2 medium waxy potatoes, diced
  • 1 onion, finely chopped
  • 1 cup ground meat (beef or chicken) or veggie alternative
  • Salt and pepper to taste

Instructions

  1. Create the Dough: In a large bowl, mix flour and salt. Cut in cold butter until it resembles coarse crumbs. Gradually add ice-cold water until dough forms; chill for 30 minutes.
  2. Prepare the Filling: Sauté onions until soft. Add ground meat or veggies and cook until browned. Stir in diced potatoes with salt and pepper; cook until slightly tender.
  3. Roll Out the Dough: Divide chilled dough into sections and roll each into circles about 1/8 inch thick.
  4. Fill and Seal Pasties: Place filling on one half of each circle, fold over the other half, and press edges firmly with a fork.
  5. Bake: Preheat oven to 375°F (190°C). Place pasties on a lined baking sheet, brush tops with beaten egg, and bake for 30-35 minutes until golden brown.
