  • 1 cup shrimp or boneless chicken, diced
  • 1 cup fresh bean sprouts
  • 2 green onions, sliced
  • 2 tbsp tamarind paste
  • 1 tbsp fish sauce
  • 2 tbsp light brown sugar
  • 2 tbsp lime juice (freshly squeezed)
  • 2 tbsp vegetable oil

  1. Soak the rice noodles in warm water for 10-15 minutes until soft. Drain and set aside.
  2. In a bowl, mix tamarind paste, fish sauce, brown sugar, and lime juice until smooth.
  3. Heat oil in a large skillet over medium-high heat. Sauté shrimp or chicken for 3-5 minutes until golden brown.
  4. Add bean sprouts and green onions; stir-fry for another 2-3 minutes.
  5. Toss in the drained noodles and sauce. Mix gently until heated through (about 2-3 minutes).
