  • 2 tbsp butter or oil

Instructions

  4. In a bowl, whisk eggs with a pinch of salt. Heat remaining butter in another skillet over medium-low heat.
  5. Pour the eggs into the skillet, swirling gently until edges set but center remains slightly runny.
  6. Spoon the fried rice mixture onto one side of the omelet. Fold the omelet over to cover the filling. Slide onto a plate and drizzle with extra ketchup if desired.
