  • 1/2 cup brown sugar, packed
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup confectioners' sugar
  • 4 oz cream cheese, softened

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, combine oats, flour, baking powder, granulated sugar, and brown sugar.
  3. In another bowl, beat softened butter and sugars until light and fluffy.
  4. Add eggs one at a time and mix in vanilla until smooth.
  5. Fold dry ingredients into the wet mixture gently.
  6. Drop dough onto prepared sheets spaced 2 inches apart. Bake for 10-12 minutes until edges are golden.
  7. For the filling, mix cream cheese and confectioners' sugar until creamy.
  8. Once cookies cool completely, spread filling on half of them and top with remaining cookies.
