Ingredients

Scale
  • 1 lb lean ground beef
  • 1/2 cup breadcrumbs (plain or Italian)
  • 1 large egg
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup low-sodium beef broth
  • 1/2 cup sour cream (or Greek yogurt)
  • Salt and pepper to taste
  • 1 tsp Italian herbs
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1 tbsp low-sodium soy sauce
  • Fresh parsley for garnish

Instructions

  1. In a large bowl, mix ground beef, breadcrumbs, egg, onion, garlic, salt, pepper, and Italian herbs until just combined.
  2. Form mixture into meatballs (about 1 to 1½ inches) and place on a parchment-lined baking tray.
  3. Heat oil in a skillet over medium heat and brown meatballs on all sides (5-7 minutes).
  4. Remove meatballs; in the same skillet, melt butter and whisk in flour until golden.
  5. Gradually add beef broth while whisking to prevent lumps. Stir in soy sauce and simmer until thickened (about 5 minutes).
  6. Return meatballs to the skillet; simmer in gravy for an additional 10-15 minutes.
  7. Serve over mashed potatoes or pasta for a fulfilling meal!
