  • 1 cup heavy cream
  • 1 tsp fresh thyme
  • 2 bay leaves

Instructions

  1. Prepare vegetables: Wash and peel the onion, carrot, and celery; chop into small pieces.
  2. Create base: In a large pot, melt butter over medium heat. Add onion, carrot, and celery; sauté for 5–7 minutes until softened.
  3. Add garlic and tomato paste: Stir in minced garlic and tomato paste; cook for about 2 minutes.
  4. Deglaze: Pour in white wine to deglaze the pot, scraping up any bits from the bottom. Add lobster stock or seafood broth and bring to a gentle simmer.
  5. Incorporate lobster: Add cooked lobster meat; let it simmer for 10–15 minutes.
  6. Blend: Use an immersion blender to puree until smooth. Stir in heavy cream and season with thyme, bay leaves, salt, and pepper before serving hot.
