  • 1 pork loin cutlet (about 150g)
  • 2 large eggs
  • 1 medium onion (sliced)
  • 1 cup cooked short-grain white rice
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp brown sugar
  • ½ cup dashi stock or chicken broth
  • 2 tbsp vegetable oil
  • 2 tbsp mirin (sweet rice wine)
  • Salt and pepper to taste

Instructions

  1. Cook the white rice according to package instructions until fluffy.
  2. Heat vegetable oil in a pan over medium heat. Season the pork cutlet with salt and pepper, then fry until golden brown on both sides. Remove and let rest.
  3. In another pan, sauté sliced onions in a splash of oil until translucent.
  4. Add dashi stock, soy sauce, mirin, and sugar to the onions; bring to a simmer.
  5. Pour beaten eggs over the mixture and cook until just set but still slightly runny.
  6. Assemble by placing rice in bowls, topping with sliced pork cutlet, and ladling the egg-onion mixture over it.
