Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • ½ cup brown sugar
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ cup unsalted butter (cold, cut into pieces)
  • ¼ cup honey or molasses
  • 24 tbsp milk or water (as needed)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, brown sugar, baking soda, salt, and cinnamon until well blended.
  3. Cut the cold butter into the dry mixture using a pastry cutter or your fingers until crumbly.
  4. Mix in honey (or molasses) and gradually add milk or water until the dough holds together; it should be slightly sticky.
  5. Knead the dough gently on a floured surface for about 30 seconds until smooth, then roll it out to about 1/8-inch thickness.
  6. Cut into squares or rectangles and place on the prepared baking sheet. Bake for 12-15 minutes until golden brown. Allow to cool completely before enjoying.
